Never feeling Blue with Gorgonzola Ravioli

Ready for an afternoon of cookery? Make sure to set some time apart to prepare this beautiful recipe. The love you put in will be felt when you serve it in the evening. For this gorgonzola ravioli recipe you will need a pasta machine and a ravioli cutter. You can choose to do it all by hand, but make sure you have a strong roller and a good knife at hand.

Ingredients for Gorgonzola Ravioli 

  • 400g of flour
  • 4 eggs 
  • 160g of Gorgonzola 
  • 60 ml of liquid cream
  • Few walnuts 
  • Olive oil 
  • Salt and pepper 

Materials Required

  • Pasta machine 
  • Ravioli cutter

Preparing the Gorgonzola Ravioli

  • On a work surface, pour 400 grams of flour and add 4 eggs, mix well until you obtain a homogeneous dough
  • Let the dough rest for 30 minutes in a plastic film 
  • In a bowl, crush the Gorgonzola cheese and mix with the liquid cream and nuts until you have a smooth paste. Put aside
  • Form four balls with the dough and put them in the dough machine to flatten them
  • Then, place the equivalent of a teaspoon of Gorgonzola mixture in the center of the dough and repeat until the end
  • Fold over the edges of the dough, then with a ravioli cutter cut each edge to form a ravioli
  • In a saucepan, boil water and and dip the ravioli in it for 2 minutes
  • Remove from water and serve on a plate with a drizzle of olive oil, a pinch of salt and a few nuts
  • It’s done! Enjoy your pasta!
