Apricots are some of the healthiest fruits in the world. They are rich in vitamin C, Vitamin A and potassium and are under 50 calories! Unfortunately for you, we will be adding quite some vanilla cream to this dreamy dessert 😉
This carmedlized apricots recipe supports any type of emotional distress. We find it particularly effective when recovering from returning from a holiday in the Mediterranean.

Ingredients
- 6 apricots
- 2 fresh lemons
- 600g of Mascarpone
- 300g of sugar
- 2 vanilla beans
- Few mint leaves
Preparing the Caramelized Apricots
1. Wash the apricots, cut them in half and remove the pits

2. In a hot frying pan, pour the sugar and add the juice of the two lemons, let it heat until it boils
3. When the sugar starts to turn brown, stir vigorously for a few minutes until it becomes homogeneous
4. Then, add the apricots and cook until they become caramelized
5. In a bowl, pour the mascarpone and add two vanilla pods, stir until you get a smooth cream

6. In a soup plate, pour the mascarpone evenly and add 3 apricots on top
7. Pour a few drops of caramel on top and add a few mint leaves for topping

8. Enjoy!
